tour to discover the cultural and gastronomical
traditions of Pays-Basque.

reception in our typical basque house (18th
century).
The Chef Patrick Barrère shared with
us his secret on the preparation of the
foie gras which we tasted during the aperitive.
The Chef explained us each meal of the lunch
cooked with products of the region.
At coffee time, the Biez Bat dancers band
and the Chistera player Jean-Bernard Etcheverry
enjoyed us with their passion of traditional
dances and "fronton" games.
In
the afternoon, Brother Jean-François
exceptionally opened the private doors of
Abbaye
de Belloc
which makes the renowned cheese with
sheep milk that
we tasted with cherry jam from Itxassou.
Brother Jean-François also realizes
carpes with Aubusson wool.
